Red Rice And Vegetable Curry

Ingredients:

  • 1 cup Kaatu Yaanam red rice
  • 2 tbsp vegetable oil
  • 1 onion,1 bell pepper chopped,
  • 2 cloves garlic, minced
  • 1 Cauliflower, 1 carrot chopped
  • 1 can of coconut milk
  • 2 tbsp red curry paste
  • Salt and pepper to taste
  • 2 tbsp chopped fresh cilantro

Instructions:

  • Rinse & soak the KaatuYaanam redrice for 30 minutes.
  • In a pot, add 2 cups water to boil, Drain the soaked rice and add in pot,add salt & close with lid.
  • Reduce the flame & let the rice cook for 20-25 minutes or until tender.
  • While the rice is cooking, heat some oil in a pan over medium heat. Add the onion and garlic and saute.
  • Add the chopped veggies to the pan and cook for 5-7 minutes.
  • Stir the red curry paste and Pour coconut milk and stir to combine.
  • Bring the curry to a sim and let it cook for 5-10 minutes, or until the sauce has thickened.
  • Serve the curry over the cooked KaatuYaanam redrice, garnished with chopped cilantro.
  • Electric rice cooker method:
  • Wash and clean the rice.Set the timer for 20-25mts in an Electric ricecooker.

Mapillai Samba Rice And Lentil Soup

Ingredients:

  • 1 cup Mapillai Samba rice
  • 1/2 cup split pigeon peas (toor dal)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 6 cups water
  • Salt and pepper to taste
  • 2 tbsp chopped cilantro

Instructions:

  • Rinse the Mapillai Samba rice and toor dal in cold water and soak it in water for one hour.
  • In a pot, heat some oil over medium heat. Add the chopped onion and garlic and sauté until fragrant.
  • Add the chopped carrot and celery and cook for 2-3 minutes.
  • Drain the rice and toor dal and add them to the pot. Stir in the turmeric, cumin, coriander, salt, and pepper.
  • Add 6 cups of water to the pot and bring it to a boil.
  • Reduce the heat to low and let the soup simmer for 30-40 minutes, or until the rice and lentils are tender.
  • Serve hot, garnished with chopped cilantro.
