Red Rice And Vegetable Curry
Ingredients:
- 1 cup Kaatu Yaanam red rice
- 2 tbsp vegetable oil
- 1 onion,1 bell pepper chopped,
- 2 cloves garlic, minced
- 1 Cauliflower, 1 carrot chopped
- 1 can of coconut milk
- 2 tbsp red curry paste
- Salt and pepper to taste
- 2 tbsp chopped fresh cilantro
Instructions:
- Rinse & soak the KaatuYaanam redrice for 30 minutes.
- In a pot, add 2 cups water to boil, Drain the soaked rice and add in pot,add salt & close with lid.
- Reduce the flame & let the rice cook for 20-25 minutes or until tender.
- While the rice is cooking, heat some oil in a pan over medium heat. Add the onion and garlic and saute.
- Add the chopped veggies to the pan and cook for 5-7 minutes.
- Stir the red curry paste and Pour coconut milk and stir to combine.
- Bring the curry to a sim and let it cook for 5-10 minutes, or until the sauce has thickened.
- Serve the curry over the cooked KaatuYaanam redrice, garnished with chopped cilantro.
- Electric rice cooker method:
- Wash and clean the rice.Set the timer for 20-25mts in an Electric ricecooker.

Mapillai Samba Rice And Lentil Soup
Ingredients:
- 1 cup Mapillai Samba rice
- 1/2 cup split pigeon peas (toor dal)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, chopped
- 1 celery stalk, chopped
- 1/2 tsp ground turmeric
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 6 cups water
- Salt and pepper to taste
- 2 tbsp chopped cilantro
Instructions:
- Rinse the Mapillai Samba rice and toor dal in cold water and soak it in water for one hour.
- In a pot, heat some oil over medium heat. Add the chopped onion and garlic and sauté until fragrant.
- Add the chopped carrot and celery and cook for 2-3 minutes.
- Drain the rice and toor dal and add them to the pot. Stir in the turmeric, cumin, coriander, salt, and pepper.
- Add 6 cups of water to the pot and bring it to a boil.
- Reduce the heat to low and let the soup simmer for 30-40 minutes, or until the rice and lentils are tender.
- Serve hot, garnished with chopped cilantro.
